A Guide to Nut and Seed Oils: For the cook, oils are a necessary ingredient. They add fat for browning and for consistency, and many oils add flavor. Oils derived from nuts and seeds also contribute to a well-balanced diet. Much attention has been focused on monounsaturated, polyunsaturated, and saturated fats - all of which can be present in nut and seed oils.

These technical terms refer to the molecular structure of the oil, more specifically, to the number of hydrogen atoms present. Saturated fats, the least healthy, contain the maximum possible number of hydrogen atoms. The healthier polyunsaturated and monounsaturated fats have less than their maximum of hydrogen atoms, so they combine more easily with other substances within the body, such as oxygen.
